5-minute mug muffin

"Eggs, fruit, oats, milk – this muffin in a mug recipe has it all! It’s healthy, nutritious, so easy to make and totally delicious!" Tara Diversi APD DVA's Dietetics Adviser


  • 1/4 cup rolled oats
  • 1 whole egg
  • 1/2 banana, mashed
  • 1 tsp chia seeds
  • 1tbsp milk
  • 1tbsp shredded coconut
  • 1/4 tsp vanilla essence
  • 1/4 tsp baking powder
  • 1/4 tsp ground cinnamon
  • 1 tbsp natural peanut butter or nut butter


  1. In a large coffee mug, mash the banana
  2. Add egg and mix well
  3. Stir in all the other ingredients except for the nut butter and optional toppings
  4. Cook on high in the microwave for 1 minute
  5. Remove.  Make a hole in the centre and add the nut butter.  Cook for another minute
  6. Eat straight out of the mug or serve on a plate with toppings

If you want a chocolatey muffin, add 1 tsp cacao or cocoa powder

Serve with your choice of optional toppings:

  • 1/4 cup berries - fresh or frozen
  • 1/2 banana - chopped
  • 1 tbsp yoghurt
  • Sprinkle of extra cinnamon
